Bulgarian white cheese is a feta variation known in Bulgaria, Macedonia and other Balkan countries as “Sirene”. Made from sheep’s milk, Sirene is a tad saltier than Greek feta and has a creamier texture, with a hint of yogurt overtones. Bulgarian white cheese is often used in traditional pastry dishes such as Banitsa (Tiropita) and Shopska salad (similar to Greek salad).

Feta cheese user –
The cheese itself tastes good. BUT, the way the can opens it’s mind bogging. You have a big rectangle peace of feta cheese block inside, BUT then the can opens following an oval contours that are shorter than the size of the block inside. So, when you open it following the contour, you end up with the feta cheese stuck inside and you have to chop it into small, small peaces before everything crumbles into a mess.
